
This heat has me dragging my feet and working at a snail’s pace these days. I’ve got a list a mile long of all the things I need to do and I’m lucky if I can cross one or two off in a day. Don’t get me wrong I love the heat, but maybe a mid-day siesta or a daily swim would help to cool me off (now, I just need a pool)!? It got me thinking that it would be a good idea to round up the top 6 simple summer recipes from the blog that will help beat this heat!
These recipes have few ingredients and can be adapted to be even simpler.

A fun way to cool down this summer is making your own waffle ice-cream sandwiches. You can get creative and add fruit, nuts, chocolate, or sprinkles. I’m a big fan of using fresh waffles but in a pinch, you can use store-bought waffles too!

This is such a fun, simple, healthy light snack to have around the house on those hot summer days. It’s full of fruit, marshmallows, and coconut, with just enough sweetness and a little tang!
#3. Coconut Water Raspberry Popsicles

It doesn’t get any simpler than this! With only 2 ingredients, these coconut water raspberry popsicles will definitely cool things down! The hardest part is waiting for them to freeze!
#4. No-Bake Coconut Tart

This No-Bake Coconut Tart is on the healthier side when it comes to desserts! There are five main ingredients; the graham wafer crust, coconut yogurt, and sugared berries making this a super light, summery, and fresh dessert! Want to make this even simpler? Instead of making sugared fruit add frozen berries on top.
#5. Campfire Banana Splits

Making Campfire Banana Splits is super simple and lots of fun (not to mention super delicious)! It’s a great way to enjoy the outdoors and cook a special treat over the fire, then add ice cream and your favourite toppings!
#6. Homemade Ice Cream Sandwiches

It doesn’t get any more classic than an ice cream sandwich to break the heat! What I love about making your own ice cream sandwich is you get to make any combination that you like! For a simpler version use store-bought cookies (although home-baked cookies are 100% better).
