Coconut Water Raspberry Popsicles

Simple, refreshing and a healthy treat – there is no better way to beat the summer heat than with these coconut water raspberry popsicles!

Ingredients

Scale
  • 1 L Coconut water at room temperature
  • Fresh or frozen raspberries, approx. a handful

Instructions

  1. Fill coconut water into popsicle moulds; filling them up just over halfway (it’s best to use coconut water at room temperature to get a nice clear colour).
  2. Place in the freezer for approx. 50 minutes to slightly firm up.
  3. In a bowl gently crush raspberries, leaving some in bigger chunks. Add one to two cups of coconut water, (just enough to fill the rest of the popsicle moulds) and mix together.
  4. Top up popsicle moulds with raspberry mixture (pouring slowly), and place them back in the freezer for another 30 minutes or so. At this stage add wood popsicle sticks and leave them to set for 2-3 hours or overnight. If using the stick that come with the moulds you can add them right away and freeze until completely set. 

Notes

For fun, you could add chunks of fresh coconut as well. See the blog post for more variations.
