With its rich and nutty flavor, French almond cream adds a luxurious and indulgent touch to many desserts like; pastries, galettes and tarts. It’s simple to make and will elevate any baker’s repertoire whether you are advanced in the kitchen or just starting out!


Units Scale
  • 1/2 cup + 2 tablespoons almond flour
  • 2 1/4 teaspoons all-purpose flour
  • 1/3 cup unsalted butter, at room temperature
  • 1/2 cup + 2 tablespoons sifted icing sugar
  • 1 large egg
  • 1 teaspoon vanilla extract or almond extract (optional)


  1. In a medium sized bowl, sift the almond flour to remove any large lumps. Add the all-purpose flour and mix together until combined.
  2. In a stand mixer with the paddle attachment, beat the butter until you have a mayonnaise-like consistency; approx. 1-2 minutes on medium speed.
  3. Then add the icing sugar, increase the speed and mix until light and fluffy.
  4. Add the almond mixture, and beat until combined. Then add the egg and vanilla, mix until smooth, scraping down the bowl as needed.
  5. Cover and place the almond cream in the fridge until you are ready to use, up to 3 days.


Store for up to 3 days covered in the refrigerator or freezer for up to 2 months. Store in an airtight container with plastic wrap directly on the surface. Let the almond cream defrost in the refrigerator when ready to use.
