4 large egg whites, at room temperature
1cup instant sugar
1 teaspoon pure vanilla extract
Instructions
Combine egg whites and sugar in a heatproof bowl (preferably your mixing bowl of your electric mixer). Set over a saucepan of simmering water (making sure the water doesn’t hit the bowl). Cook, whisking constantly until sugar has dissolved and mixture is warm to the touch (approx. 160ËšF degrees if you have a candy thermometer).
Place the bowl back onto the mixer, fitted with the whisk attachment. Beat the egg-white mixture on high speed until it holds stiff peaks. Continue beating until the mixture is fluffy and cooled, about 6-8 minutes. Add vanilla and mix.
