As a kid my brother and I used to take Eggo Waffles and sandwich them with vanilla ice cream making our own waffle ice cream sandwiches. The warm toasted waffles and the cold melting ice cream dripping down our arms is a memory I’ll never forget!
Now that I’m an adult I can make my own waffles and can fancy up or dress down my very own style of a waffle ice cream sandwich! It’s simpler than you think to make; after you bake your waffles all you do is add your ice cream and desired treats/toppings – now that’s an easy recipe!
Makes a fun Summer Activity with Kids
This is such a great treat to make with the kids on a summer day. You can fill bowls up with nuts and chocolate and let them press the waffles into each one making their own fun waffle ice cream sandwiches. It’s a bit healthier than the regular cookie ice cream version (if that’s something that matters to you)! And it’s also a great way to use up those leftover waffles from breakfast.

How To Get a Professional looking ice cream sandwich
Here’s a great trick to getting a perfect, evenly thick slice of ice cream for each sandwich. Take a large tub of your favourite ice cream (mine is Kawartha Dairy) and simply dump the entire contents out in one solid piece. Now slice 1-inch thick rounds. Using your waffle as a stencil cut ice cream into desired shapes to fit your waffles. Voila!
Tips For The Perfect Homemade Waffle Ice Cream Sandwiches
- Avoid stacking the waffles directly on top of each other after they are baked, as they may become soggy.
- Make sure the waffles are at room temperature before sandwiching them with ice cream.
- Use a sharp large knife to slice 1″-1 1/2″ sections of ice cream. If the knife is sharp enough you can slice right through the ice cream container so there’s no need to remove the ice cream from the tub.
- If you’re looking for more flavour, add your toppings into the middle of the sandwich with the ice cream too. For example, press fresh fruit into the ice cream and then add the second waffle on top.

Step One: Preheat your waffle maker. Make your waffle batter and let rest for 5-8 minutes. Then spoon the batter into the waffle maker and cook until golden brown. Let waffles cool completely (preferably on a wire rack, so they don’t get soggy).


Step Two: Remove the ice cream packaging and dump the entire contents in one solid piece. Slice into 1-inch thick rounds. Using your waffle as a stencil cut ice cream into desired shapes to fit your waffles. I did triangles.


Step Three: Sandwich the ice cream between 2 waffles. Then decorate your ice cream waffle sandwiches as you like; press the sides of your waffle sandwich into nuts, semi-sweet chocolate chips, melted chocolate, caramel sauce, fruit, etc.

- Add wet ingredients to dry. Gently mix your batter just until combined. Let the batter rest for 5-8 minutes.
- Pour mixture into each section of your waffle iron. Cook until golden brown (if needed spray waffle iron with non-stick cooking spray).
- Set waffles aside to cool.

Notes
If you freeze your sandwiches for later, make sure you take them out and let them soften for approx. 10 mins before eating (they will be frozen solid and difficult to eat).
