No Bake Almond Coconut Energy Balls

These energy balls have only 5 main ingredients of delicious goodness! They don’t need to be baked and are super easy to make. They are a great snack to tuck into your gym bag, lunch box, or a little treat after dinner. Original recipe found here on Camille Styles Blog.

Ingredients

  • 2 cups dates, pitted (about 1lb)
  • 2 cups raw almonds
  • 1 cup unsweetened shredded coconut, divided
  • 1/4 cup dark cocoa powder
  • 1/2 teaspoon sea salt
  • 3 Tablespoons almond butter
  • 1 teaspoon pure vanilla extract
  • 13 Tablespoons warm water (less if your dates are really sticky)

Instructions

  1. In a pan over medium heat, toast 1/2 cup of coconut, stirring frequently until golden brown. Set aside and let cool completely.
  2. Meanwhile, in a food processor add dates, almonds, the other 1/2 cup of coconut, cocoa powder and salt. Pulse until mixture is crumbly.
  3. Add almond butter, vanilla and continue to pulse. Test the mixture at this point by taking a small amount and press it between your fingers. If it sticks together easily and can roll into a ball, it’s ready. If the mixture is dry, add 1 tablespoon of water at a time, pulsing/mixing in between until the mixture is sticky enough to hold its shape (mine took about 3 tablespoons of water). This will depend on how sticky the dates are.
  4. Roll the date mixture into approx. 1 – inch balls (I used a tablespoon to scoop the mixture and measure), then roll the balls in toasted coconut. You will need to press the coconut into the sides of the balls to help it stick. See my trick above for a helpful tip.

Notes

Store bites in an airtight container at room temperature for up to two weeks.
